i have lately been growing and enjoying a wonderful mix of red cabbage and broccoli sprouts. i have been reading about how legume sprouts may contain high amounts of enzyme inhibitors and so may drag down digestion. i also recently learned that both alfalfa and red clover are legumes. what are your thoughts about legume sprouts and enzyme inhibitors?
i have found that eating large amounts of the red cabbage/broccoli sprouts stimulates really great digestion and bowel movements, while eating the same amounts of alfalfa sprouts does not really have the same affect. so that got me thinking there may be something to the high enzyme inhibitor theory regarding legume sprouts.
