one thing i might add here that may be helpful is marinading your meat in bragg's apple cider vinegar for 24 hours before cooking it. the acid and the mother culture in the acv break down and pre digest the meat, and make it WAY easier to digest and absorb. meat made this way is extremely tender and extremely easy to chew. its very good. i have been doing this and would recommend it to anyone, especially someone in your condition. if it interests you i can give you more info about it.
