i dont have much time this morning, but right off the top of my head, the acrylamides are the result of cooking food, something that was originally done just to break down complex starches in some grains, legumes and tubers and to "sterilize" the outside of meat that had been hanging. now everything is cooked, and usually at much higher temps and in oil(bad ones at that).
second, protein is acid forming in the body. acid=cancer. and most animal protein is a concentration of the pollutants int he environment. imagine that.
