Well, it's more for the nutritional value than the taste. Personally I don't like the taste of raw eggs. My husband is Japanese and they eat raw eggs on rice with soy sauce so he loves them! But I'm definitely going to get into your eggnog idea!
Eggs are good brain food, so your little Angel will be developing a very good brain!! Weston Price Foundation recommends a soft boiled yolk (3 and a half minutes) and the egg white discarded for babies. I think egg white isn't recommended before age 1 or even 2 because of the albumin.
