At the Ann Wigmore Hipocrates health centre and one here in Aus thats what they do - Juice the rind... and on heaps of anti cancer protocol centres thats what they do... mostly for breakfast.
I also eat as much as I can (whatever my tolerance threshold is for that day) and tell myself its like a cucumber/salad green type thing. Sometimes I actually convince myself it is... others I can't stomach too much. But it is FULL of benefit. If I cut it up fancily enough I do tend to eat more... grate it? cut it into cute shapes... But mostly if I do eat it, I don't eat it straight, I eat it in combination with the mellon as one would in some sort of meal. Bit of this bit of that... more tolerable. lol... my kids put in in the freezer on hot days and then eat it. weirdos.
