I forgot one essential ingredient of the chutney!
the cilantro chutney
I make is:
2 bunches cilantro, finely chopped or pulsed
an
inch or so of grated ginger
acv just to moisten.
a handful or so of raw grated coconut
(from the old, brown kind)
pinch salt
pinch of evaporated cane juice
Sugar or a date,
( these are good for when the produce is not high-brix)
and, several 5 or more green jalapenos,
not including the seeds. pulsed or finely chopped.
Even so, you will get a few seeds in it, and it's perfect
the combination of cilantro green, sour, sweet, salty and gingery
with that slight coconut fatness--i have an intuition
it's the perfect green food, and
for chelating heavy metals as well.
Wish I had the ability to make it in quantity...
