It is, yes :)
There is a special ingredient in the gut that keeps it moving and helps maintain the lining of the entire digestive tract (mouth to bum). It is dependant upon having the right bacteria from raw fruits and vegetables, and that bacteria eats resistant starches (previously also called fiber).
That ingredient is called n-butyric-acid, and it's a signal produced by the bacteria I mentioned, to tell it's fellows that it has found food, and has eaten it. That signal also stops an overgrowth of the type of bacteria that live best off of the types of carbohydrates you mention, that you have stopped eating.
The lining on your tongue is the type of bacteria used in baker's yeast, which is trying to find new places to live, since there is no longer so much food in your gut for it.
To get the right type, add more apples, carrots, fresh fruit and gently-cooked dark green vegetables to your meals.
Feeling tired is Ok. It takes time to adjust to a new diet. It also takes time to get new patterns going in the body.

Getting acid reflux means food is not moving fast enough through the intestinal tract, and it needs more of those fruit and vegetable fibers. Having a more fiber-fich diet will help keep the gut moving at a proper pace, it still needs signals to get chuggin' along.
N-butyric-acid can be purchased as a supplement. There is the fishing-lure ingredient (pure liquid n-butyric-acid) and the sodium-bound version produced by body bio. The first is very inexpensive, the second is a bottle of enough capsules to last about 15 days for a 70kg (~154lb person).
I use the fishing-lure ingredient (it's smelly!) myself in water, a few drops every now and then. When I use it, it makes constipation go away, and my nose runs a bit, and it feels a little harder to breathe. That's because mucous-producing cells love it. I am trying to eat a fruit and veggie-strong diet, I have been on the paleo-style diet (which focuses on a meat-fat-veg-fruit-very little grains only theory) before two or three times, but found it didn't achieve all my goals.
The fishing lure drops are something I find much easier to use than the pills, because it's simpler to hold one's nose and swallow a glass of water than swallow funky capsules.

Among what is needed to rest your head and get a break from the headahe is the minerals and vitamins found in kale, spinach, and a lot of the green vegetables. The minerals will also help your body reduce the fuzzy tongue-bacteria. Remember the color green when you go to the grocery store.
Oil-pulling (gently swishing food oils) around in your mouth for a short period until it goes thick and spitting the stuff back out into the trash is the best way to get the gunk off your tongue.
