There are many ways to increase Brix of fruit, vegetables or grass.
Plant genetics is an important part, but that's not the whole story.

Why is that some fruit of the same variety, grown close to each other (so similar rainfall and the amount of sunlight) is sweeter and more tasty?

The answer is better nutrients in the soil or better foliar feeding. Good nutrition allows photosynthesis to be more efficient.
