I think it was in Wheat Belly where it's mentioned that all these problems with wheat gluten intolerance began after scientists started hybridizing wheat in the 1960s to increase yield (and profits). These new hybrids were never tested on humans, they were assumed to be safe (and profitable). So the wheat we have today is not the same wheat as 100 years ago, or even 50 years ago.
