Soaked and sprouted should clean up some of the "toxins" in grains. Kind of like how the Indians would prepare acorns by soaking them multiple times and then making flour out of them. Maybe einkorn soaked and sprouted would be best? Too bad we can't just go to Trader Joe's and buy some einkorn bread. All that soaking, sprouting, drying, grinding and bread making takes alot of time, I'm lucky if I can make it to work on time as it is.
