"Cold potato salad contains reformed resistant starch so that's a good. Resistant starch contains no contributing carbs in digestion through the small intestine, so no bad carbs. However in the large intestine your good biome feast on it increasing their numbers and strength over the bad bugs.
The way it makes it to your large intestine without being digested I've seen described as like kernels of popcorn which have not been popped by heat (cooking heat bursts them into regular carbs) yet the bacteria are able to disassemble them for nutrient. I havn't sent in my American Gut Project specimen yet, I'm still pre-tweeking my result hoping to get an A+. Will send you a copy of my report card in coming months.
As the gut goes so goes general heath, it's the engine of the immune system and our vitamin manufacuring plant. I've seen lower glucose readings both fasting and post meal spike reduction, better more restful sleep, HUGE movements the consistency of soft serve ice cream along with increased acuity which I've seen descibed as the gut/brain connection which for me translates to more time spent being in the zone, no fog, clear skies.

It doesn't matter when, with or without meal as it doesn't digest anyway. I'm taking 4 tablespoons a day. It mixes easily with any liquid and has virtually no taste, very easy to take. I normally take mine mixed with raw milk.
Nothing can create new strains except new strains. Without proper flora in place the RS is only feeding an empty cage. I have taken a varity of pro-biotics, even injested a bit of soil off the farm as I've heard good things about the soil based pro-biotics.
