Candida in its fungal form is designed for an alkaline environment. Candida in its yeast form =acidic environment. So it seems the little bastards mutate back and forth and "adapt" accordingly to whichever environment is going on. Candida in its fungal form creates more ammonia and damaging enzymes that produce gut inflammation and candida in its yeast form seem to produce more damaging alcohols and symptoms related to alcohol poisining. Both forms seem to be damaging when it is out of control. Some of these candida specialists think that candida is just a yeast form that thrives in an acidic environment, but fails to recognize the science behind the fungal form which thrives in an alkaline environment. When candida goes in its its fungal form is when it can do more damage to our benefecial organisms, because its cell wall is stronger and can produce more damaging enzymes(outside of its cell) that not only breakdown some of our gut tissue but also probably destroys the cell membrane of beneficial bacteria. Thats why its a bad idea to completly avoid sugar. A diet that completly avoids all sugar( simple/complex) encourages fungal candida. Its been my experience that fungal candida is designed to break down protein/fats, whereas candida in its yeast form is designed to breakdown sugars.

So I can understand why Anthony is so determined for people to avoid an high animal fat/protein diet=discourages the fungal form of candida. But needs to realize for people that have the majority/entire gut overtaken by candida, diet alone cannot "cure" because candida can adapt to any diet because there are no beneficial organisms to inhibit its conversion/proliferation. Once the candida dominates the GI tract and has wiped out darn near all the flora is when hell settles in.  Severe candida is not just a symptom but a condition of a gut ecosystem that is out of balance. Candida might be just a symptom when it is minimal, but becomes a serious condition when it gets out of control.
