Please let us know how it goes. I don't see anything wrong with your plan unless you planned it to go for an extreme length of time. I have read that if you restart your fast again within a short period of time, it is like continuing the fast because ketones are still in your system. From what I have read it is better than starting all over again and you would not lose as much, if any, muscle tissue as you continue. How long are you planning to do this?
