Servus,
the greatest proportion of consumed carbohydrates are actually converted to glucose, (not fatty acids) and any surplus of this will store as glycogen, a starch unique to animals, in muscle tissue and the liver. It is only an excess of carbohydrates that form fatty acids for long term energy storage.
When the body needs some extra energy, it will turn to these glycogen reserves and convert those into energy.
