MSG and wheat gluten both are forms of glutamic acid-one's natural, the other isn't. And that's all you need to know about this disease. Remember, too, that cows eat wheat and produce our milk.
One way or the other, the GL Acid (Excitatory)/GABA (Inhibitory) junction has shut down, that's the real problem. Those with Celiac are very nervous people, have met several.
My point is that in the end, it doesn't much matter what's causing it, be it gluten or MSG. They're stimulating their brain too much, via the glutamate, and/or its lack of ability to convert over to GABA effectively.
This, in turn, causes disruption to Renin and Aldosterone, via 21 Hydroxylase. And there you have the bowel problems.
Bottomline is that the GI experts need to be recommending that their patients not drink any milk or other sources of glutamate, including MSG-opinion. All non liquid dairy sources should be fine, such as cheese or yogurt because it's been fermented. That's all that's needed (The Fermentation)- has nothing to do with the Acidophillus content of yogurt.
The evidence is pretty clear, in any respect-Celiac/Casein allergy is a disease of the brain, not the lower GI. It starts up top.
