And it's also long enough to break protein down into smaller pieces (peptides and amino acids), these smaller pieces can connect with carbohydrates/sugard and/or creatine (in red meat) and/or
nitrates (from vegetables) and form new substances. These new substances are called Hetero Cyclic Amines (HCAs).
These HCA's have harmful (for example cancerous) qualities, and many of them are, directly or indirectly, physically addictive. Other possible effects are (amongst others): appetite enhancement, sleeplessness, stimulation of aggression, increase of blood pressure, etc.
The amount of HCAs which is formed depends on temperature, duration of heating, and quantity of protein.
Fats and cholesterol also undergo harmful changes when heated, resulting in transfats and oxysterols.
Two benefits don't make a danger right!
EDIT: because I wasn't clear, it's obviously better to cook some foods rather than eat them raw (well I'm not sure about this actually as I didn't care to research something erroneous anyway but) so cooking may be helpful if you decide to consume unnatural food, but it's still going to have worse consequences than consuming a more natural and proper diet (like a fruit based one supplemented with safe raw food (wildcaught salmon and free range organic egg *yolks* for example)
