This Amish family that makes the sorghum mollasses is the only settlement that I have came accross in our state, I understand it is more common in Kentucky and Wisconsin. The family is very low order Amish that live off the land. They don't buy anything, so their soil must be very natural. They would be applying lots of natural manure to the soil which would produce much natural bacteria to eat the minerals that would supply small minerals to the plants that then turn these minerals to organic form. Cooking the sorghum kills the organic nature of these minerals/sugars but I read the potassium still works for the human body when taken with these natural sugars and it is always potassium that corrects the blood and clean blood keeps the teeth cavity free.
I do make a formula for the kids that uses 1/3 of this Sorghum mollassess and took it out of my price list in fear I would sell out! I get this about every other year and from 10-20 gallons, so not allot to go around.
