Crystalline fructose is produced from a fructose-enriched corn syrup which results in a finished product of at least 98% fructose and where the content of fructose within fruits and vegetables is much much lower and therefore more easily metabolized by the body as health-enhancing: for example carrots only contain approx' 0.6g of fructose per 100g, and apples contain approx' 5.9g per 100g.
Most commercial fruit juices have HFCS added. Fruit also contains fiber which slows down the metabolism of fructose and other sugars, but the fructose in HFCS is absorbed very quickly.
We should also bear in mind that the ratio of fructose content within fruit/vegetables is naturally occurring, and adapted by Nature for human consumption.
