As a somewhat experienced water faster (longest fast was 35 days) that's not doing well on carbs, I break my fasts with diluted vegetable juice. Most vegetables are OK, except perhaps carrots and pumpkins, although those are still lower in carbs than fruit.

Fasts of 10 days or less I break on raw meat (carpaccio with olive oil), although I do agree that this is probably not such a good idea if you're not like myself a pronounced protein metabolic type.

By the way, years ago, when I was a student, I have eaten as a fruitarian for 3-4 months and, although I wouldn't say I was "fat", I certainly was in worse shape than on my current diet, which mainly consists of meat/fish and lots of vegetables.
