I'll try to answer your questions as best I can... but this is all just from my personal experience. Everybody is really really different when it comes to problems like this.
My number one bit of advice is to find a Doc (or naturopath.... but make sure they can prescribe meds!) who is familiar with adrenal exhaustion and is willing to work with you. I know that is easier said than done.... but I've found that VERY few people get well without having a good doc to work with.
1. Yes, I definitely feel the lack of emotions symptom. The worse my adrenals are... the worse the lack of emotions. When I take Cortef (cortisone) in the right amount and the right time (and it seems to change constantly), I'll suddenly "get my emotions back". Cortef is something you might have to consider. Dr. Wilson's book is great and his suggestions are excellent.... but if you've implemented them and still feel lousy, you might need something stronger. (also consider trying Isocort first..... you can get that without a prescription). You might just also need more time working with Dr. Wilson's suggestions. But from your post, it DEFINITELY sounds like you have adrenal fatigue.
2. How to cure it.... get more "help" for your adrenals. That is why I say you might need to consider Cortef. It sounds like you are doing very good/smart things as far your diet and keeping your blood
Sugar more stable... that is a good start. But you might need more help than that.
3. The adrenals and thyroid are so "intertwined" in a way... that it's almost impossible to tell what is producting what. But either thyroid or adrenals can produce this sense of "lack of emotions" or what is sometimes called "low or zero affect". Usually BOTH the adrenals and thyroid have to be treated together for a person to get better. You might want to consider trying to get switched from Thyroxine (which is T4 thyroid hormone) to a natural form such as Armour which contains all the various thyroid hormone fractions.... most importantly T3, which is what your body actually uses for energy. BUT..... if you do that.... make sure your adrenals are WELL "supported" by something like Cortef.... or you will make your adrenals worse (the T3 will "borrow" energy from your adrenals, stimulating them more... and draining them). Also, it is very possible that the Thyroxine isn't really helping you at all. Rarely is T4 what a person with hypothyroid needs (their bodies can't convert it to T3 readily) AND... if your adrenals are low, the thyroid hormone can NOT get into the cells ANYWAY. Your adrenals (cortisol levels) have to be at a certain "level" to allow the thyroid hormone to do its job. That's why I say they are so intertwined.
Nothing I've ever seen explains it better than the Stop The Madness thyroid site. They have actually "figured it all out" in my opinion. Read the WHOLE site.... all the thyroid info AND all the adrenal info and how they are so linked.

4. 6 months is not a long time to have been dealing with this.... and 3 months is a very short period of time to be treating it. I've been dealing with it for 15 years. That's not to "scare" you..... just to say that you are "lucky" you've discovered what some of your issues are so soon.
I also have some REALLY GOOD DAYS out of nowhere and then try to "trace my steps" and figure out what I did. It's USELESS to do that. I've never been able to discover any pattern. There are just too many "X-factors".
So my best advice is to FIND A GOOD ENDOCRINOLOGIST who believes in this stuff and will LISTEN. Without someone like that working with you, you will always be shooting in the dark and a lot of the things that you may or may not do to help yourself may actually be making things WORSE without you realizing it.
