Corn is controversial. If you look at some celiac disease websites, some say that corn has gluten and some say it doesn't. My doctor says NO CORN but I do eat corn because grains are so limited otherwise. I do notice bad effects if I eat a lot of it. Steer clear of genetically modified corn.

Another thing, corn can be a grain (flour) or a vegetable (corn on the cob). It's better to eat it as a vegetable than as a grain.

If you want breakfast ideas, millet is the best grain. I buy it in bulk, soak it overnight, cook for 30 minutes. Mix with whatever you want - fruit, almond butter, plain yogurt, or all 3. It's quite tasty when you get used to it. I also have eggs for breakfast. Or I make a fruit smoothie and add the cooked millet to it (like a cup or so per pitcher) to make it more filling. I have also enjoyed quinoa but it has to be soaked very well as it can make you sick if you don't prepare it correctly. Let me know if you want any more details.

I have kids with allergies so breakfast has been evolving over the last few years. It's a tough meal because we're so used to bread and cereal. It doesn't have to be that way though. Just takes some adjusting.
