I would really like to know too. When I first heard the term "raw vinagar", from the book, I had never heard of it. A google led me to apple cider vinagar; nor were any health food or otherwise stores helpful. I do get a really good unfiltered olive oil from Bariani which also makes a balsamic vinegar, but I do not see "raw" mentioned. I'm assuming that "raw" means not processed with heat or unfiltered. So, I just buy Organic unprocessed vinegars. But maybe someone will come along that knows what the difference is, because I would really like to understand it.
