There is a pickled thing widely eaten in Malaysia called Achar.
I am pretty sure you could make a raw fermented version.
It has green beans, cauliflower, cucumber, small amount of carrots, ginger, garlic, chili powder, sesame seeds. You could omit whichever of those things you aren't allowed to have. Basically a kimchi but with different veggies, plus sesame seeds. It tastes really good! Just an idea.
