Hi Robin!
What are your veggies? (there are 4 different protein types w/different veggie lists).
I want to do this too! I'm a high purine so my veggies are green beans, asparagus, cauliflower, spinach. None of these are in any of my ferment books but they say you can ferment any veggie.

RE: How to info....
1. Start w/Sally Fallon's Nourishing Traditions... that book rocks!

2. Also, here's a great fermentation site to consider since all protein types can have kiefer, yogurt etc. as their part 3 foods. I ferment my kiefer from raw goats milk.

3. I'll be trying the green beans as soon as they come into season in my area (north of San Francisco). Until then I'm only consuming my kiefer once a day.
