Coconut oil fudge recipe


Hi, I posted it over in the coconut oil forum. It's fantastic, and EASY! It's my favorite recipe of the year.

Here's the original recipe:

COCONUT OIL FUDGE
1 1/2 cups coconut oil
1 1/2 cups honey
1 cup cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla extract (optional, tastes fine without it)

Dump it all in the blender and mix till smooth. Pour it into a pan (I use a 9x13 glass pan) and let it set up. Depending on your climate and time of year you may need to refrigerate it if it's over 70 degrees or so in your kitchen. Cut into small pieces and try not to eat it all the first day.

Check over on the coconut oil forum, there are variations on it that others have done too that look good. Last time I put a little in the bottoms of muffin tins and let it harden up and then put a little peanut butter on it then covered with more fudge. Kind of like a reeses cup. It was messy and I don't think I'll do it again that way as I prefer my fudge straight up, but it was real good.

I'm working on a way to mix it with xylitol or raw honey and pecans to make pralines.
