We have something in common then, I have a daughter with Asperger's/high functioning autism. Unfortunately, she's choosing to go to high school in another state so I have no input on her diet right now. I am very thankful for Andreas book "Freedom From Judgement" because he has really relieved my concerns about her and all the other "nuts" in my family tree. (We're a regular "Planter's Assortment" down here.)
You're right pyrex would be the best answer; I use the foil because I like to cook in my little oven to avoid heating up the kitchen in hot weather and a dish to fit in it wouldn't hold enough vegetables. But when the weather turns cooler that's what I'll use.
I use palm oil a lot, it's very versatile because it doesn't have much taste and I love the rich golden color it adds to dishes. I'll put some in a spray bottle (Misto) and use that instead. Funny, I knew that about olive oil, but it's what's already in the spray bottle so...lol, I also have a touch of autism - when I'm used to doing things a certain way I don't think of alternatives until someone points them out. (Once during remodeling I lived with a step stool parked right in front of the kitchen sink for a solid week before it occurred to me to move it out of the way.)
Yeah, I know raw food is better, I ate raw for a year until I started reading Andreas, found ayurveda, found out I was a vata and -Halleluia- I should eat cooked. I was so glad!! I was so sick of the constant
juicing of dandelions and wheatgrass and sprouts. (Have you ever drunk raw mustard greens? Now there's a trip you won't soon forget!! It burns going in AND out!) And I couldn't figure out why I didn't feel that great on raw. We do eat a lot of raw fruit and vegetables still though. And we only use raw dairy. I still can't bring myself to cook any fruit no matter how good the recipe sounds.
It's all just a process. I figure about the time I really know enough to be able to give advice, it'll be time to check out. Even sooner if I get Alzheimers from my tin foil hah hah :) (geez I gave up deoderant isn't that good enough for you people? My family already thinks I've gone round the bend, what with all the flushes and trips to Mexico to get rid of mercury and banning fabric softener and toothpaste and plastic and the whole kinesiology in the grocery store bit.)
Glad you liked the fudge, I also like that it's raw. Well, except for the cocoa :)
