Favorite way to eat vegetables
I just discovered a new way to make scrumptious vegetables. Well, it's new to me, you may already be eating them this way. I line a cookie sheet with foil and spray a little olive oil on it. Then I cut up a bunch of different vegetables and spread them out on the foil. Then I give them a good spray or drizzle of olive oil and salt and pepper and maybe sprinkle some rosemary on them and bake them at 400 degrees until they're shriveled up and crispy on the edges. Stir them once or twice during cooking. It takes about 20 -30 minutes depending on the thickness of the veggies.
The first time I did this I couldn't get over how easy and yummy it was. KIDS LOVE THIS!! We especially like green beans, potatoes, sweet potatoes, and onions done this way.
Celery sticks are too tough, but
Celery cut horizontally works well. Peppers, yum. This is the only way I actually crave green beans, lol.
The best part is that it's a great way to use up that last potato, carrot and zucchini before you go to the market the next day. No wait, the best part is you can just set out a big pan of it on the table and call it lunch and everybody loves it!
