Again you are wrong about carbohydrates

CH_3-CH_2CH=O + OH- -----> you get a keto-enol shift


RCHO + I2 + 3NaOH -----------> RCOO-Na+ + 2NaI + 2H2O

A more detailed look at CHO digestion

* alpha-amylases:
o hydrolyze alpha-1,4 bonds to convert polysaccharides with alpha-1,4 bonds e.g. glycogen and starch, into oligo- and disaccharides such as maltose and alpha-limit dextrins
o the first amylase that food encounters is oral ptyalin which works until inactivated by stomach acidity
o pancreatic amylase carries out the same reaction from the duodenum distally

* disaccharidases:
o found in association with the small intestinal brush border
o sucrase: hydrolyzes sucrose to glucose and fructose
o maltase: hydrolyzes maltose to 2 glucose residues or maltose triose to 3 glucose residues
o lactase: converts lactose into glucose and galactose
o alpha-limit dextrinase: hydrolyzes dextrins into short chains of glucose residues

* 1,6-glucosidase:
o secreted by the small intestine
o hydrolyzes branched dextrins
