1) While it is fermenting, it is not in the fridge. When it is done, then yes.
2) No water added. Just the juices of the cabbage after hammering it for some time. That dissolves the Sea Salt to form the brine.
I have never done an enema, and until recently did not know what it was. But I have read of risks, both of puncturing the colon, or harming oneself in other ways.
