You make some excellent points. Food items have varying degrees of safety with regard to candidiasis. It is not totally black or white. I feel that oat bran is mostly safe BUT it should not be eaten in the beginning stages of battling candida. Introducing probiotics and prebiotics takes place after antifungal and strict diet has been practiced and the fungal load on the body has been GREATLY reduced. This will probably take months to achieve. It all depends on how long you've had candida.
I've never tried buckwheat. I know that it is not really "wheat". The name is a misnomer. I do know that it is a good probiotic. Another good probiotic is raw onion. There is a variety of onion that is not hot but somewhat "sweet".
It is a tricky business in knowing when to start prebiotics because if taken too early it can aggravate candida. And like you say, perhaps they should be eaten in moderate amounts.
As much as some people say that the immune system needs carbs, my experience has made me very cautious (fearful even) to eat ANY carbs while experiencing candida. You can hear arguments from both sides of the issue. I lean toward the no carb side but perhaps really low carb is the better way to go. It is not easy to find the perfect balance since the issue is somewhat clouded and not neatly black or white.
