I am guessing it is because of all the white processed flour products that are used in dining out, or the ease with which they incorporate themselves into our daily lives. It is much easier to grab a couple pieces of bread to make a sandwich than it is to prepare something without the use of bread, crackers, or pasta. Most people do not wish to take the time today to supply themselves with the necessary ingredients or invest the time it takes to prepare something fresh for every meal. Eating a low carb diet takes time and planning, and it is a bit more expensive to eat fresh things, or organic, or grass fed. There are a multitude of reasons why most do not follow the plan. I have trouble explaining to friends that invite me over to dinner that I do not eat pasta, or wheat, or sugar. Their response is immediate and always the same... "Then what do you eat?" I do not mind eating a narrower field of foods than most people. I know what works for me, and I know that to be at my healthiest, I need to remain within certain perimeters. Today's wheat, processed sugars, and things made with these things bring obesity and it's evils. I am glad that you found what works for you. I am glad that you were able to discover what your body needs. For me, grains are not my friend, nor is sugar. The vegan lifestyle has too much of those things for me. That is why we are all here... to help each other find what is the optimal nourishment for our body. I do believe that each of us needs to find out what that is.... so both of our views are valuable to those who are seeking. I do not disagree with your choice... it works for you. But, my choice works for me. And, rather than debate or put the other down, I believe that it is our duty to honor all opinions as valid for them, even if it is not our choice.
