I remember all that 'talk' from my IBS days.
In reality few where ever helped with Spelt or other ancient grains. Its not just the grain it is how you use it that counts.
You can still get non GMO, non hybrid (sort of) wheat but its a challenge. The key is the sourdough culture which is dependent on the water you use and that is where it all breaks down.
