I am a habitual faster. And from my own experience, it's very difficult to say ahead when you have to finish your water fast. The most efficient fasting happens when you use up all your safe internal resources, and that depends on a lot of personal factors, such as amount of fat, muscle, and stored nutrients.

In my case, it always happens after 21 days of fasting. I know that it happens because I suddenly become hungry. And not hungry in my mind, dreaming about food and reading cooking books, but actually hungry in my body, and always for some specific food, like give-it-to-me-or-I-kill kind of a hunger. At that point, the only way I can extend my fasting is by adding highly diluted juices (I prefer carrot and then apple).

I think that you plan with your transitional period diet is very good. Just remember to listen to your body and spend a lot of time masticating your food. With good mastication, you might chose any reasonable food your body wants.

I have to confess that once I broke my 21 day water-only fast with a Big Mac. I spent hours masticating it though, and it was okay as the result. But I'll never recommend to try such an experiment. In my another much earlier fast, I was transitioning "by the book", but felt really bad - with severe diarrhea and vomiting - after eating meat on the second week of my transitional diet.

Be cautious and very slow on the way out. Listen to your own body.
