Lili, what a fun conversation; good thoughts. It's funny how we usually think of tea as hot. It occurs to me that more and more words need quotes around them. :-) But what you are talking about is more of an infusion, and wonderful! I oftrn infuse nettles all night, and this makes not really a tea but a meal. (>I do have a little character sitting on my shoulder here, that's saying, "pssst--Some of the good stuff in plants comes out with a little heat!": so maybe an idea is to do mostly the cool steeping, and then add a small amount that is hot-brewed, and mix these. Of course, i'm speaking about experiementing with less and less, as I am wont to do, in summer. I seem to do better with less of everything, but I'm warming to more and more herbal drinks. (and I love kombucha: just finished some with yerba mate.) Not this cool steeping gets into "sun tea", which is one lovely way to "brew" hibiscus--a suoer summer drink/food. It was my mother, many years ago that introduced me to hibiscus sun tea. What an elixir. But in summer also, and it's getting very hot up here, kombucha with some pressed blueberry juice and ginger is divine.
