Can you sum up why too much (mono)carbs are bad for those not having the book? I already know why complex carbs, starch and insoluble fiber can be a problem...not so much with simple sugars other than the anti-insulin hype that you hear everywhere.
And thanks for the bread recipes you posted somewhere, bookmarked and looking forward to try them!
