You let if ferment for 24 hours and not 4-6 hours like the store bought yogurt. All the lactose is gone after that. It's a lot easier to digest. There are more probiotic cultures as well, more nutrients and calcium.
You can increase the fat content of the end product as well.
And it tastes better too.
