For the potatoes, I mashed in roasted shallots, garlic, and mixed with chicken stock.
For the rice, I made the made them a greek grape leave flavor. I boiled some canned grape leaves, roasted some chopped onion in the oven, added parsley, lemon juice, and chicken stock to the rice with some spinach.

My malabsorption stools went away with the addition of large amounts of cooked spinach. I was able to do this last year while still eating chicken too. Neighbors and coworkers commented on my weightgain. On a diet of lots of nuts and red meat I was malabsorbing and looking horrible.
