Thank you Trimnut2, a very timely post indeed, I am about to purchase a bokashi unit next week, so I am definitely going to try this method of preservation. It sounds very similar to a system that I've seen in use when I was growing up in Malaysia. I'm wondering if this is the method used to preserve chinese cabbage, that I am very fond of eating.
I would love it if you can post a couple of good sites or books to read on this method.
