It may or may not be relevant in your case, but I just saw some parallels in the emotional stress you've mentioned and what I've been experiencing.
You've been eating very light lately, as have I, and I just wanted to let you know that I've been eating ACV salads for two weeks (summertime tomatoes!) and the past two days I've had nothing formed in the toilet. Here's an excerpt from my whole foods encyclopedia:
"As Paul Pitchford, teacher and author of Healing with Whole Foods, warns, regular use of a vinegar remedy can lead to a kind of vinegar dependency. Furthermore, he advises, it is contraindicated in cases of "weak digestion marked by loose, watery stools; general deficiency (frailty); muscular injury or weakness, including rheumatism."
I just wanted to highlight the loose stools part. Because my diet has been EXTREMELY light, I think just a couple tablespoons on my daily salads are enough to make it unformed. I'm thinking I have to cut out the ACV :( and see if my "formation" returns.
For your protein, I think you could benefit by trying miso broth with nori. Lately I've had bad anxiety, and just having this in the morning seems to help the nerves in my stomach. I have a chinese food store nearby that sells red miso in the refrigerated section for about $6 and that should last you about 2-3 weeks taken daily. It's not organic, (organic $ are astronomical) but I think the fermented soy with rice is a really great way of getting necessary protein, and helps with intestinal flora. Nori sheets disintegrate in hot water in seconds so it's really easy to prepare for added nutrition.

PS-by extremely light diet, I mean miso soup, juiced carrot/apple, greens/apple/chick pea/garlic/ACV salad, herbal tea w/honey.
