If one were to build this circuit, what would be an ideal power source? 9v array? Or a transformer? Or power supply?

If the latter ones, what would be the minimum voltage and Amps, or milliamps that a PS would need to output? From all the reading, am finding a good rule of thumb is a 30v power supply?

Am I think about this properly?

Want to attain smaller particles of course... it is easy to see how 4 9v connected to two silver rods start very slow in distilled water, then as things progress, it speeds up and I know I am producing small boulders by the end. (ok, slight exaggeration, but I know there is a far better way to attain great EIS).
