I kept the lid on the jar tight (again it was the the big "iced tea" jar with the plastic lid) and have been fermenting my water kefir for 2 days this way but still no fizz or anything like that.

Does the fizz happen quickly or soon after the kefir starts fermenting? Or does it take a few days before that happens? I opened the jar a few times yesterday just to see if there was a certain smell to the fermenting kefir water. Maybe I shouldn't be doing that.
