What got me thinking there might be a connection for you was what you wrote here:

"The pain has come up after my trip to Mexico, where I stayed around 8 months. I might have not hydrated properly there, also considering the various diarrheas and the hot weather, I was mainly in Oaxaca which was in severe draught.
Another track is that after Mexico I found myself incredibly deficient in vit.B, maybe due to the diarrheas, which I had also previously, in Norway. So maybe there's something disturbing my colon, can it have anything to do with it?"

I also ate VERY healthily. But I've had gut issues that became acute after a trip to Japan. I believe I had a bacterial/candida overgrowth. Maybe related to low stomach acid. I don't know. Something in me allowed bad stuff to overgrow. The year I had plantar faciitis, my health was really poor in other ways and my digestion was bad.

When I went on a program to heal my gut, my plantar faciitis went away.

I don't know if this id what's going on with you at all but just thought I'd offer it as an idea.
