I have lived some of the things that you are describing.
Popping, swelling.
The popping is likely the joint popping out of its proper position, this causes ligaments to stretch (painful).
The best thing I know for this is a good chiropractor.
Chiropractors that specialize in sports injuries are the most skilled with knee joints.
They adjust it and put it back in place. This stops the stretching of the ligaments and further swelling.
I have not read of good results from the meniscus surgery which may explain why it hasn't been the same since for you.
My understanding is that to do that some nerves have to be cut to get in there.
The best other thing I can suggest for the health of the knee joint besides a Glucosamine/condroitment supplement, is lots of good water and no caffeine.
This properly hydrates the cartilage tissue and helps it to regenerate.
Since the joint isn't able to take much abuse it probably just needs a little building up which the water and glucosamine supplement will help with.
Another thing helpful for the nerve function is magnesium.
The water will also help with nerve function.
If possible avoid the orthopedic surgeons, their main job is to do surgeries.

A couple of recommendations;
A product called "Real water" is great for hydration.
I get it at "Whole foods" or you can google it.
Magnesium oil is great for getting magnesium and also a product called "Natural calm".
Don't bother with magnesium capsules they don't absorb.
The best glucosamine supplements are in liquid form and some also have MSM.
I would highly recommend these three avenues for the knee along with a good chiropractor when and if needed.
And try to, at least gently, exercise the muscles of the legs.
Good muscle tone is important for the knee joint.
This helps hold it in its place.
