It does sound like it could be candida. I realized the other day that my body reacts strangely to corn flour + protein. When I have something made out of corn flour with a large amount of protein, the brain fog lifts for about 10 minutes. Then I get all tired and it comes back again. But this only happens when it's with a protein and it has to be corn flour. (Bread + protein or rice + protein or quinoa/amaranth/millet + protein doesn't do this.) If it's by itself, I get lightheaded like I do when I have a regular simple carb by itself. This also confuses me. I have a feeling that if it's something that short lived, I shouldn't eat it -- but it's just so nice to have that relief once in awhile, even if it's just for a few minutes... :-\
