Rob, you really must get "Eat to Live" by Joel Fuhrman. It's $15. And in fact, you can join his website for $40 and get a ebook version for free, that's what I did. See

In chapter 1, titled "Digging Our Graves with Forks and Knives, The effects of the American Diet" he says when you start eating healthily, you will lose weight until you reach your ideal weight. He says this is an individual thing, but it is harder to lose muscle than fat, so once the fat comes off your weight will stabilize.
At this point, he says your body gives you strong signals to eat, namely true hunger. He says when people eat healthily, they enjoy this new sensation of hunger in the mouth and throat, which makes food taste better than ever.
Chris did comment on this in an earlier post of mine, I can't find that now, but but I am still not really clear on how this dovetails in with fasting, because you experience true hunger at the end of a fast to completion. So does this mean that people who are eat healthily or are into calorie restriction diets don't have any reserves with which to fast? And if that is true, does that then mean that anyone who has reserves to fast is already overeating???
That I am unclear on, but I intend to get Fuhrman's fasting and Eating for Health book soon, so I'll read that, or Chrisb1 may probably say something.
Maybe the answer is that our ancestors would eat lots in excess before they embarked on any long or risky journey, and this over-eating state was not the norm for them.
It's all really exciting stuff this, I can't wait to experience true hunger too. I guess that will be the spring though for me.
