I didn't have sorghum flour either, I read on the internet to substitute rice flour.
then I put too much water in (I halfed the recipe so I guess I got something wrong)I ended up throwing in more tapioca flour and some corn flour I had so the mixture wasn't so wet.
Also you don't have to use a rolling pin, just flatten the dough down.
I also used rapid rise yeast and I don't think I let it rise at all, just threw it in the oven! No harm done though. I think it's a fool proof recipe! Ha ha.
I don't use flax seed in place of egg, I use egg so I didn't even notice that about flax seed. I didn't know you couldn't cook with it, so I will remember that in case it ever comes up again. I also have egg replacer from the health food store, not sure what's in it or if it's healthy.
I know corn isn't really good, is it? The next thing to try to eliminate.
Well it's good sorghum is good anyway, I notice alot of gf recipes are using it, that and teff flour.
