I usually use 100% whole wheat flour that has been stoneground (increasingly difficult to get now for some strange reason) as I find this to be the best baker, but I do use a mixture of Rye/millet/rolled oats/and stir in some sunflower seeds as I make the dough sometimes; whatever the fancy takes me and also what is available in the house at the time.

Yes a fortnight is two weeks exactly.
