I don't think it's very polite to turn RG's forum into a debate forum. If you want me to reply after this, I am glad to, but why don't you choose an appropriate forum?
In the meanwhile, I assure you that I (and probably everyone else) who researches and makes a switch to non-traditional/-SAD ways of eating does research and investigates pros and cons of making such a switch. Just as I am sure a lot of people have to make a certain leap of faith before they come to CZ for any reason (for instance, parasites). Both farms where I get meat and pork are well managed and one of them uses an abbatoir I have been able to visit. Also, a big factor is that the animals are healthier in general.
At the goat farm where I get milk and eggs, it's a very clean operation. (Ditto on the healthier animals, too.)
Funnily enough, a meat I won't eat raw, actually, is venison -- even though it is "natural" by so many standards. A friend where I grew up gives us venison periodically when he kills a buck and I do love to get it and cook with it. But I have no way of knowing anything about parasites/bacteria, etc. in venison. At this point I am still primarily worried about the Ascaris from the dog, especially in light of what RG just said above.
I also think slow cooking or par-cooking might eliminate the possibility of parasites/bacteria in meats but allow for more nutrients to survive, but I have never reserached temperatures, etc.
