Gosh, it was so lovely to get back to work after having three days off. I realize how utter boring I get when I don't make plans to keep myself busy. I am feeling really antsy and I really want the weather to get better so that why I can go out and do thing like take walks and stuff. I hate this coldness and I want SPRING! I talked to my dad on Sunday and were were sharing how cooped up we have been feeling. For my Dad it must be much worse, because he has to be very careful about protecting his lungs. He can't go out in the bitter cold, so he doesn't get to get out as much as he would like, except for doctor visits.

I think my life feels more normal when I am following a routine. I guess that is why weekends are kind of boring and long for me. I don't plan enough stuff to do in all the time that I have. I guess you can say that out of all the years of working 2 and 3 jobs, I have never grown accustom to having the whole weekend to myself. In the past, I was always working and fighting to get time for myself and now, I have the time, and I am so very bored. Lately I have spent a lot of time reading, but I want to do more then just that. I looks like I will have to list out some type of “things to do” on my wipe off board that is on the back of my front door. Currently it doesn't have anything written on it, but I have it there for a reason. I usually use it to put notes to myself, such as things I need to buy at the grocery store so I don't forget.

There was been talk that there is another snow storm coming later on this week, but I am trying not to listen to it. I have mixed feelings about them. I kind of want to have a snow day, but then again, I don't want to be cooped up in my house any more then I have been. I want SPRING! It is coming up on March 20th. I really need to start getting ready to garden and picking out my seed for my veggie garden. Instead, right now I am wondering about some snow storm. I guess it probably is because the news has been bombarded several states with storms, that I have been paying more attention then I usually do. I am sure that I am not the only one really tired of the snow. LOL

One of the Attorney's, allowed me to borrow this older ipod to check out difference types of music, since there are songs that I love that I don't know the name of it or the band. He knows I have an Ipod touch that I bought three years ago off of my friend, who was selling his, because he needed the cash. I got it for $100.00. He was living with another friend of mine, and he ended up selling all his electronics, including his phone to get money. I think I made out good, but since my computer wasn't a new one, I have never put any music on it. I hope to get a new computer soon, because I am saving up for it. Well, the attorney is allowing me to check out the music he has on there, so I can write down the songs that I like. I have found several songs that I have never heard of before and really like. My current MP3 player, a Coby., is a 2 GB and it is full. It is a flash drive stick MP3 Player and I love it. I have an 8 GB MP4, but I don't like it as much. It is a touch screen, but I don't like it as much. I have music on it too and one movie. The ipod touch I have is an 8 GB as well, but it just sits on my dresser most of the time, unless I want to mess with it. He let me borrow it so I could listen to the music on it. I mostly have been listening to it while at work. It has 2,242 songs on it! LOL

I have been playing my abdominal muscle tightening game for a bit today. That is when I scoop my muscles (another word for tightening those muscles) and see how long I can hold them tight. So far the longest I have been able to do it today, while thinking about it has been 10 minutes. I have noticed a difference in them now, then I have in the past. I love how I can feel them tight under the layer of fat that I am still trying to get rid of.

Dinner was a simple affair of Salmon and veggies. It seems that I can't get enough of broccoli lately. So my veggies are a mixture of broccoli (lots of it!), cauliflower, asparagus(when I have it), and carrots. I love that I have frozen Salmon in my freezer, to eat anytime I want. I have to say that I enjoy fresh (non frozen) salmon better, but I am not too picked. It is salmon! I probably pick something up from the meat counter on thursday, so that I way I can have a little bit of something other then Salmon. It is has been the staple lately for me, other then a little bit of chicken. I haven't had any steak in a while, which I might pick a little bit of that up so I can change around what I am eating. But pretty much, I haven't gotten bored with Salmon or veggies.

I picked up a couple cans of chucked chicken in a can last week just to have on hand for quick lunches, since I don't always have cooked chicken ready for topper on a salad or something. Salad is the only thing I could come up with so I found a couple recipes that I could use.

Here is one:


Chicken Quesadilla

As a tasty appetizer or a delicious dinner, these quesadillas are simply delicious. The fajita chicken and colorful peppers blend beautifully with bacon bits and melted cheeses, and they still taste wonderful once reheated.

Ingredients

1 pound skinless, boneless chicken breast halves
1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese

Cooking Instructions

1.Preheat the broiler.

2.Cut the chicken into small cubes and prepare with the fajita seasoning mix. Broil 5 minutes, or until the chicken is no longer pink on the inside

3.Preheat oven to 350 degrees F (175 degrees C).

4.Heat the oil in a large saucepan over medium heat. Mix in the seasoned chicken, green bell peppers, red bell peppers and onion. Slowly cook and stir 10 minutes, or until the vegetables are tender.

5.Layer 1/2 of each tortilla with Cheddar cheese, chicken mixture and desired amount of bacon bits. Top with Monterey Jack. Fold the tortillas.

6.Bake in the preheated oven 10 minutes, or until the cheese has melted.



I thought I could rig this little recipe in a lunch one, by using canned chicken and cooking some of the veggies or using fresh. I always like crunchy green peppers. I could always microwave it all on a tortilla.

This one I found on Yahoo answers:


Mix the canned chicken with a little low fat mayo and a little mustard, put it in a whole wheat pita with lettuce, tomato and low fat cheese. It is very healthy and filling.


I really enjoy collecting healthy recipes that I can use. Because eating this way is a life time thing. The one thing I have learned from my health journey is that I will have to always be on my toes on how I eat, it I want to remain health during my lifetime. That means that I have to have an active role in what I put in my body. I just can't go and eat anything I want anymore. I am not 15 years old and I shouldn't eat like I am 15 year old either. You can say that all my horrible eating has caught out with me, and now I am trying to correct a lot of it.

I can't wait to see my body at the end of June. I wonder what I will weight and how I will look. Maybe I will look AWESOME in a bathing suit. Yay!
