A Summer Meal

Sun Burgers
6 C. Almonds
2 C. Brazil nuts
1 C. Pine nuts
1/4 C. Fresh Thyme, finely chopped
1/4 C. Fresh Sage, finely chopped
2 Stalks Celery
1/3 C. Cold Pressed Olive Oil
1 T. Celtic Sea Salt
1 T. Fresh Ginger, chopped
1 Jalapeno, finely chopped with seeds
1 Head Romaine Lettuce
1. Soak almonds overnight in refrigerator.

MORROCAN CARROT MINT SALAD
6 medium carrots, peeled and sliced or shredded
3 tsp cumin, Ground
2 fresh dates
3 tsp fresh lemon juice
1/3 cup olive oil
1 cup fresh mint leaves (or ½ cup dried)
1/8 tsp cayenne pepper
In a blender or food processor, blend dates with lemon juice. Mix in a medium sized bowl with cayenne, and cumin. Whisk in olive oil. Add shredded carrot and marinate for a few hours or overnight.
Serve cool or at room temperature.
Serves 4 as a first course or side dish. Or serve on a bed of greens.

ALMOND FALAFEL
2 cups almonds or hazelnuts, soaked
1 cup sunflower seeds, soaked
3 lemons, juiced
garlic to taste (3 cloves)
Dark green plants (2 cups at least of parsley, celery, or cilantro)
1 Tbsp curry (optional)
1 Tbsp cumin
In separate batches:
Mix 2 lemon juice with almonds.
Mix 1 lemon juice with sunseeds.
Blend greens with garlic.
Mix together and add spices.

This is one to serve to impress your guests! If you can’t get fresh coconut you can use 250 ml (8 fl oz) of coconut milk instead, but coconut milk is not raw.
* 3 mushrooms
* 3 tomatoes
* 1 clove garlic
* a piece fresh ginger
* a piece galangal
* a lemon grass stick
* a red chilli
* 2 dates
* 3 lime leaves
* juice of 1 lime
* a small bunch of coriander
* 60 g /2 oz fresh coconut, chopped
* 125 g /4 oz spinach

* 6 oz. rejuvelac

Ingredients:
* 3 cups sprouted chickpeas
* 1/2 cup tahini
* 1/2 cup lemon juice
* 2 large cloves garlic
* 1/2 tsp. cumin
* 1/2 tsp. cayenne
* 1 tsp. oregano
* 1 tsp. paprika
* 1/4 cup toasted sesane seeds (optional)
Directions:
* Process all ingredients with S blade, adding water only if necessary to make a thick pate. Serve with fresh vegetable slices. Depending on the size of your processor, you may need to do this in steps.
